When Eren was eaten (swallowed, to be precise) alive, the digestive acids in the mindless titan’s bowels injured him. Paired with his urge to live which stood in for his will to transform (given that he didn’t know he was a shifter at that point in the story), both conditions for titanization were satisfied, and the rest is history.
So, he didn’t die because he’s a Titan and he regenerated. The titan never ate him, he just swallowed Eren. Only Eren’s left hand was sliced by that titan’s bite, not his whole body, so he survived inside and then later escaped by transforming himself into a titan.
NOTE: And oh, if you’re wondering why the mindless titan didn’t inherit the powers of the Attack Titan, it’s because Eren was swallowed whole. For titan powers to be transferred via ingestion, the Shifter’s spinal fluid has to be digested by the hostile mindless titan.
